Mini Squash Fritters
2 C. Finely Chopped Yellow Squash
1 C. Finely Chopped Onion
1 Egg Beaten
1 Tsp. Salt
1 Tsp. Pepper
½ C. + 1 TBSP Flour
Vegetable Oil
 
Combine squash, onion, egg, salt, & pepper. Mix well, stir in flour. Heat ½ inch of oil in a skillet over med/high heat. Drop batter by TBSP into oil. Cook about 3 minutes per side or until Golden Brown, turning once. Remove & Drain on Paper Towels.
